Appealing Asparagus with Lemon Dressing
Ingredients
- 1lb. Asparagus spears (cleaned and ends trimmed)
- 1 teaspoon fresh minced garlic
- 1-2 tablespoons extra virgin olive oil
- 1 tablespoon fresh grated lemon zest
- Salt and fresh ground black pepper, to taste
For the Lemon Dressing: Heat olive oil in a small saucepan and stir in garlic, lemon peel, salt and pepper. Simmer 2 minutes over low heat and pour over steamed or grilled asparagus.
Directions
- To steam asparagus, place 1/4 -1/2 cup cold water in a skillet and bring to a boil. Add clean asparagus spears, cover and steam for 2-4 minutes, until spears are crispy tender and still bright green. Do not overlook asparagus.
- Drain asparagus and serve immediately with Lemon Dressing.
Comments: These days I prefer the taste of grilled asparagus over steamed. Since we grill dinner almost year round, my husband grills asparagus while he has the grill on for our dinner entrees. Just add a small amount of olive oil to cleaned and trimmed asparagus and add your favorite seasonings such as, salt, pepper, garlic powder, dried Italian seasonings and turmeric for a tasty marinade and mix to completely coat the asparagus before adding them to a hot grill. Grill marinated asparagus for approximately 5 - 6 minutes, turning frequently and watch for burning.
